10-Minute Tacos (Gluten Free)

Ingredients

  • 1 lb. ground beef (ground turkey or chicken can easily be substituted)*
  • 1/2 jar (or more) tomato or marinara sauce between 1-2 cups
  • 1/4-1/2 package taco seasoning package I use Trader Joe’s and it’s spicy. I only use 1/4 pckg because my daughter, Lindsey, can't tolerate much spice
  • 1 package corn taco shells many corn taco shells are gluten free. make sure yours are!

Toppings

  • 1/2 bag shredded lettuce romaine, bibb, iceberg, etc.
  • 1/2 jar salsa mild, medium or hot
  • 1/2 bag shredded cheese your favorite kind
  • pre-made guacamole
  • sour cream

Instructions

  • Preheat the oven to 350 degrees on Bake.
  • Line a pan with foil and place taco shells on the foil.
  • Heat large nonstick skillet on medium heat. No oil needed. Add ground meat to the pan. Cook for 3-4 minutes, until cooked through. Drain fat if necessary.
  • Add spice pack and tomato sauce. Mix in and simmer for an additonal 5-6 minutes. Total meat cook time 9-10 minutes.
  • As the ground meat is cooking, place the taco shells in the oven for 2-3 minutes to warm them and then organize the toppings.
  • Once ground beef is finished cooking, place in a bowl for serving.

Toppings

  • For taco night at our house, I make it VERY SIMPLE and use all pre-made ingredients. (This is very unusual for me but, hey, it’s all about getting this meal on the table in 10 minutes!) While beef is cooking, place the different toppings in bowls. I generally use bigger bowls for the ground meat, lettuce and cheese, and smaller bowls for the salsa, guacamole, and sour cream. You may want to do it differently.
  • Put all bowls on the table along with the warmed taco shells and let everyone make his/her own tacos.

Notes

*If using ground chicken or turkey, add 1-2 tablespoons of oil to the pan.
You can use soft tortillas instead of taco shells. Just make sure to use a gluten free brand.
With these same ingredients, you can deconstruct the taco and make a taco salad instead.
Add/delete and modify ingredients and amounts as necessary to fit your preferences.

Consider adding refried beans, cilantro, chopped tomatoes, chopped onions, sliced black olives.
