The beauty of this risotto recipe is it’s BAKED and therefore VERY easy and stress-free to make. This is a fabulous risotto chock-full of green veggies…kale, spinach, and peas. The veggies help to offset the typical rich and creamy nature of risotto recipes. I may be going out on a limb here but I would even call Baked Risotto with Kale, Spinach, and Peas “Healthy-ish!”
