No-Fuss Crispy Roast Chicken

There are so many ways to roast a chicken but my No-Fuss Crispy Roast Chicken recipe is the easiest and best.  It will leave you with crispy yet juicy chicken every time!

3-Step Prep for Roasting the Chicken

Step #1: Trim and pat dry chicken.

Step #2: Coat outside of chicken with McCormick’s Grill Mates Chicken Spice rub or your favorite spice rub. No oil or butter needed.

Step #3: Place chicken BREAST-SIDE DOWN on a rack in roasting pan as shown in photo above. (You’ll know you have done it correctly if the wings are on top and the drumsticks are touching the bottom of the pan.) This is a very important step that enables the juices to flow from the dark meat down into the white meat which allows for the juiciest white meat possible.  

Cook chicken for approximately 1 hour 15 minutes, until skin is crispy, golden brown and internal temperature of dark meat reads 165 degrees on a thermometer.

Allow chicken to cool for 5-10 minutes and then slice. Place chicken on a platter and garnish as desired.

Ingredients

  • 1 whole chicken (See NOTE section below) approx 4-5 lbs.
  • McCormick’s Grill Mates Chicken Seasoning rub or your preferred brand of dry rub seasonings or your own custom blend

Instructions

  • Preheat oven to 350 degrees on Roast Setting. Use Bake if your oven doesn’t have Roast.
  • Trim and pat dry chicken including the inside.
  • Coat outside of chicken with McCormick’s Grill Mates Chicken Spice rub. No oil or butter needed.
  • Place chicken BREAST-SIDE DOWN on a rack in a roasting pan. You’ll know you've done it correctly if the wings are on top and the drumsticks are touching the bottom of the pan.
  • Put chicken in oven and roast for 1 hour 15 minutes, until internal temperature of the dark meat is 165 degrees. Rotate pan halfway through cooking.
  • Let chicken cool for 5-10 minutes before slicing.
  • Carve chicken and serve on a platter. Garnish as desired.

Notes

I like brands such as Bell & Evans and Empire. Their chickens just taste better! And Empire chickens are pre-brined which adds lots of flavor.
Cooking times may vary based on size of the chicken.
Feel free to add vegetables to the pan while the chicken is cooking – onions, carrots, fennel, potatoes, etc.
If you like seasoning the inside cavity of the chicken by adding citrus, fruit, herbs, and/or seasoning, by all means, please do so.
