Quick-style Korean Pickles

I love super-easy recipes that are big on flavor. This recipe checks those boxes! Combine a few sauce ingredients, add sliced cucumbers, mix together and let marinate for at least 10 minutes. That’s it!

Slice cucumbers and mix sauce ingredients.

Let cucumbers marinate for at least 10 minutes. Serve and eat!

Ingredients

  • 1 seedless English cucumber or 4 small Persian or Kirby cucumbers
  • 1/4 cup rice wine vinegar
  • 2 tablespoons superfine sugar (confectioners sugar)
  • 1 tablespoon garlic chili paste
  • 1 1/2 teaspoons salt
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon toasted sesame seeds for garnish

Instructions

  • Wash, dry and thinly slice the cucumber(1/4 to 1/8-inch thick.)
  • Whisk rice wine vinegar, sugar, garlic chili paste, salt and sesame oil in a medium sized bowl. Add sliced cucumbers and toss.
  • Let marinate for a minimum of 10 minutes. If marinating for longer than 10 minutes, cover with plastic wrap and put in the fridge. When ready to serve, sprinkle on sesame seeds if desired and enjoy.

Notes
