Ingredients
1can of tunain water or oil, drained
1hard-boiled egg (See NOTES section for link to Perfectly Cooked Hard Boiled Egg recipe)chopped
2-3tablespoonscelerychopped
2tablespoonsshredded cheeseyour favorite kind
2tablespoonsbell pepperany color, chopped
1tablespoononionred or white, chopped
2teaspoonssweet relish
1teaspooncapers
1 1/2-2tablespoonsmayonnaiseregular or low fat
fresh ground pepper and squeeze of lemonif desired
Instructions
Open can of tuna and drain. Place tuna in a medium size bowl and shred tuna using a fork to the consistency of your liking.
Add all remaining ingredients to the bowl. Mix until combined.
Serve plain, on top of a salad, with crackers or on toasted gluten free bread. My favorite is to make a tuna melt. Use your favorite cheese.

The beauty of this recipe is its versatility. Omit, modify or substitute any of the ingredients to your liking.Perfectly Cooked Hard Boiled EggsAdd sliced jalapeno to spice up your tuna salad.
