Tuna Salad with "The Works"

Ingredients

  • 1 can of tuna in water or oil, drained
  • 1 hard-boiled egg (See NOTES section for link to Perfectly Cooked Hard Boiled Egg recipe) chopped
  • 2-3 tablespoons celery chopped
  • 2 tablespoons shredded cheese your favorite kind
  • 2 tablespoons bell pepper any color, chopped
  • 1 tablespoon onion red or white, chopped
  • 2 teaspoons sweet relish
  • 1 teaspoon capers
  • 1 1/2-2 tablespoons mayonnaise regular or low fat
  • fresh ground pepper and squeeze of lemon if desired

Instructions

  • Open can of tuna and drain. Place tuna in a medium size bowl and shred tuna using a fork to the consistency of your liking.
  • Add all remaining ingredients to the bowl. Mix until combined.
  • Serve plain, on top of a salad, with crackers or on toasted gluten free bread. My favorite is to make a tuna melt. Use your favorite cheese.

Notes

The beauty of this recipe is its versatility. Omit, modify or substitute any of the ingredients to your liking.
Perfectly Cooked Hard Boiled Eggs
Add sliced jalapeno to spice up your tuna salad.  Better yet, if you can get your hands on a jar of Pot Belly's Hot Peppers...go for it.
I like Trader Joe's gluten free bagels and gluten free bread from Udi's and Canyon House.
