Shaved Brussels with Wasabi Mayo Drizzle

Ingredients

  • 9 ounce bag shaved Brussels sprouts See NOTES section below
  • 1 tablespoon neutral oil such as canola or vegetable
  • 1/2 tablespoon wasabi powder available online and at most markets
  • 1 tablespoon cold water divided
  • 2 tablespoons mayonnaise if desired, lite mayo can be used
  • Fresh basil or cilantro leaves only, rough chopped, optional

Instructions

  • Place wasabi powder in a small bowl with 1/2 tablespoon cold water. Mix until combined and let rest for 10 minutes to allow wasabi to come to its full flavor and form into a paste.
  • After 10 minutes, combine the wasabi paste with the mayonnaise and then add the remaining 1/2 tablespoon of water. The sauce should be thin enough to drizzle onto the Brussels Sprouts. To make the sauce thinner, add more cold water in 1 teaspoon increments.
  • While wasabi is resting, heat oil in a large pan over medium-high heat. Once heated, add Brussels sprouts to the pan and allow to cook undisturbed for approx. 3 minutes. This is an important initial step to achieve the best browning and caramelization of the Brussels sprouts.
  • Then toss Brussels sprouts in 1 minutes intervals, adding a drop more oil if needed, and seasoning with kosher salt and freshly ground black pepper. The goal is to have the Brussels sprouts browned AND softened so you may need to fine tune the heat of the stove during the last 4 minutes of cooking. Total cooking time is approx. 7 minutes.
  • Once Brussels sprouts are cooked, transfer them to a platter. Season with more kosher salt and freshly ground pepper if needed, use a spoon to drizzle the wasabi mayo over the Brussels sprouts, and finish with fresh herbs, if desired. If there’s leftover wasabi mayo, serve it on the side.

Notes

You can also buy whole Brussels sprouts and use a food processor to shave or chop them…just be sure to trim the ends and remove any brown outer leaves.
If buying pre-packaged shaved Brussels sprouts, you will notice some whole/bigger pieces that should be cut into smaller pieces for more even cooking. Toss any brown leaves.
Wasabi Mayo would also be delicious on roasted broccoli and cauliflower, sautéed string beans, roasted or smashed potatoes, and more!
