Ingredients

  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons hot sauce Frank’s or Crystal
  • 2 teaspoons unseasoned rice vinegar
  • 2 teaspoons honey
  • Kosher Salt
  • 2-3 ripe peaches or nectarines any variety, cut into wedges (skin on or off)

  • 1 ball of Burrata (8 ounce) torn into large pieces
  • Fresh basil or tarragon
  • Kosher salt to taste

Instructions

  • Whisk oil, hot sauce, vinegar, and honey in a small bowl until honey is dissolved. Then season with kosher salt.
  • Toss peaches and tomatoes with half of the dressing in a medium bowl. Let sit for 5 minutes.
  • Transfer fruit salad to a platter. Top with burrata and drizzle with remaining dressing. Scatter fresh herbs on top and season with more kosher salt if needed.

Notes

For a little bit of crunch, add sunflower or pumpkin seeds or some roasted crushed nuts.
Fresh mozzarella can be substituted for burrata.
