Peach, Tomato, and Burrata Salad with Hot Honey Dressing

Ingredients
2tablespoonsextra virgin olive oil
2tablespoonshot sauceFrank’s or Crystal
2teaspoonsunseasoned rice vinegar
2teaspoonshoney
Kosher Salt
2-3ripe peaches or nectarinesany variety, cut into wedges (skin on or off)
2large ripe tomatoesany variety, any color, sliced into wedges (throw in some cherry tomatoes too!)
1 ballof Burrata (8 ounce)torn into large pieces
Fresh basil or tarragon
Kosher salt to taste
Instructions
Whisk oil, hot sauce, vinegar, and honey in a small bowl until honey is dissolved. Then season with kosher salt.
Toss peaches and tomatoes with half of the dressing in a medium bowl. Let sit for 5 minutes.
Transfer fruit salad to a platter. Top with burrata and drizzle with remaining dressing. Scatter fresh herbs on top and season with more kosher salt if needed.
Notes
For a little bit of crunch, add sunflower or pumpkin seeds or some roasted crushed nuts.Fresh mozzarella can be substituted for burrata.
