Ingredients

  • 2 cups of a mixture of raw unsalted, whole nuts* such as walnuts, pecans, cashews, macadamias, almonds, Use a mixture of all of them or just your favorites.
  • 1 tablespoon unsalted butter
  • 1/2 cup white sugar granulated
  • 1 tablespoon cold water
  • 3/4 teaspoons kosher salt
  • 3/4 teaspoon smoked paprika
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 350 degrees and line baking sheet with parchment paper.
  • Place combination of nuts in a medium-large bowl.
  • Melt 1 tablespoon butter in a small saucepan over medium-low heat and once butter is melting, add 1/2 cup white sugar, 1 tablespoon cold water, 3/4 teaspoon smoked paprika, 3/4 teaspoon kosher salt, 1/4 teaspoon ground coriander, 1/4 teaspoon ground cumin, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, and 1/4 teaspoon black pepper. Simmer gently for 2 minutes stirring regularly with a spatula.
  • Pour candy sauce over the mixed nuts and mix until the nuts are thoroughly coated.
  • Transfer nuts to the baking sheet and bake for 10 minutes, and then using a spatula, give the nuts a toss and continue cooking for another 8-10 minutes. If the nuts are browned at 8 minutes, they're done. Otherwise continue cooking another 1-2 minutes. Total cooking time is 18-20 minutes.
  • Let the nuts cool for 20 minutes and while nuts are still slightly warm, break up into either individuals nut pieces and/or into small nut clusters. Either serve immediately in a bowl or transfer to an airtight container for later use.

Notes

* Use any raw nuts but try to use ones that are similarly sized! 
The recipe can easily be doubled or tripled.
Rough chop a handful of nuts and add them as a topper on roasted veggies or your salad.
