Ingredients
1packageProtein Greens or any mixture of hearty greensapprox 4 cups
1/2Honeycrisp applesliced thin but not too thin (skin can be peeled, if desired
1can tuna or salmonpreferably in oil and drained
red onionfew slices
handfulcandied pecans (pieces or halves)optional (I buy mine at Trader Joes)
Parmesan either grated or shaved
Dressing
3tablespoonsextra virgin olive oil
3tablespoonsred wine vinegar
1/2teaspoonkosher salt
1/2 teaspoonfreshly ground black pepper
1/4teaspoonoreganooptional
1/4teaspoonground fenneloptional
1/4teaspoonza’ataroptional
Instructions
Dressing
Place olive oil, vinegar, and spices into a bowl and whisk until combined. Set aside until ready to use. Re-whisk before using.
Salad Assembly
Place greens, apple slices, onions, and any protein you’d like to use in a medium large bowl. Spoon a few tablespoons of dressing over salad and give a good mix. Use more dressing if needed. Top salad with candied nuts and parmesan, if desired.
Notes
Slice the apples right before you're ready to eat or serve the salad to avoid discoloration.If Honeycrisp apples aren’t your favorite, use another variety of apple.Add sliced celery or fennel to add layered complexity.Consider adding tofu or chicken as alternative proteins
