1/3cupof olive oil plus more for drizzling if desired
2garlic clovesminced
1shallothalved vertically and sliced thin
1/2teaspoonhot pepper flakesmodify to your spice level
lemon zest from 2 lemonsuse more or less based on preference
juice from 2 lemonsuse more or less based on preference
1/2cupwhite wine(See NOTE section below.)
pat of butter
1 package(GF) SpaghettiBarilla brand
1container jumbo lump crabmeatI like Phillips brand
1/2cupbasil or cilantro leavestorn or chopped
Kosher Salt and Freshly Ground Pepper to taste
lemon slices and basil or cilantro as garnish
Instructions
Heat olive oil in a large pan on medium-high heat.
Once heated, add the sliced shallots, hot pepper flakes and minced garlic and cook until beginning to soften, 1-2 minutes.
Then add the lemon zest and cook for approximately 30 seconds until fragrant.
Add the lemon juice and white wine. Cook for 2-3 minutes.
Add a pat of butter, if using.
While the sauce is being prepared, cook the pasta. Follow cooking directions on the package for best results and drain pasta once cooked.
Add the cooked pasta, crab and fresh herbs to the sauce.
Using tongs gently mix together and cook until crab is heated through, 1-2 minutes.
Transfer to a platter and drizzle with more olive oil, if desired. Garnish with basil or cilantro and lemon slices. Serve immediately.
Notes
If desired substitute fresh hot peppers such as jalapeños or fresnos for the hot pepper flakes.Spinach or arugula can be easily be added to this dish. If so, add at the same time the crabmeat is added. The heat of the pasta will wilt the greens.Clams or shrimp can be substituted or added to the pasta.If not following a gluten free diet, use regular pasta.This dish can be a main course or accompany a main course.I don't usually add parmesan to seafood pasta dishes but I tried it on this one and it's delicious.If watching calories, butter can be omitted.For the white wine, use whatever you have open in the refrigerator. If you don’t have any open, use a wine that you like to drink and have a glass with your meal.
