Crab Louie Cobb Salad

Ingredients

  • 1 1/2 Bags of Bibb lettuce romaine, iceberg and/or frisée can also be used
  • 1 Cup Jumbo Lump Crabmeat
  • 2 Radishes washed sliced or chopped
  • 1/4 Red Pepper (green, yellow and/or orange) diced
  • 1-2 Hard Boiled Eggs chopped
  • 1 Avocado diced
  • Handful of Cherry Tomatoes halved
  • 1/4-1/3 Cup Onion Red or White, chopped
  • 2-4 slices Swiss Cheese (substitute your favorite cheese) sliced & cut into pieces
  • 1 Cucumber sliced or chopped
  • Kosher Salt and Fresh Ground Pepper to taste
  • Serve with Thousand Island Dressing or with your favorite dressing

Instructions

  • Transfer the bag(s) of lettuce to a big bowl.
  • Add next 9 ingredients in a triangular pattern on top of the lettuce, as shown in photo above. 
  • Serve with Thousand Island Dressing on the side.

Notes

Crumbled bacon would also be delicious in this salad.
For presentation purposes, I serve this salad with the dressing on the side.  
You can add, delete or modify any of the ingredients mentioned in this salad.  For example, if you like edamame, add them. If you don't like onions omit them. If you're not a swiss cheese person, substitute blue cheese (or your favorite cheese).  You get the idea.
If you don't have time to organize the salad as a Cobb, just layer the ingredients in as you would for a traditional salad.  It will still be delicious.
