Caramelized Crispy Fennel

Ingredients

  • 2 bulbs fennel tops removed, bulbs cut in half vertically removing any outer damaged leaves, and then julienne (slice)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt

Instructions

  • Heat oil in a large pan over medium-low heat.
  • Add fennel and salt, and cook for 30 minutes. Then increase the heat to medium for the remaining 15 minutes, stirring occasionally until caramelized with crispy edges, 45 minutes total.
  • Remove fennel from pan and add to your favorite fish, meat, poultry, and/or vegetarian dish.

Notes

Caramelized Fennel pairs amazingly well with Shawarma-Spiced Lamb and any burger. 
Large white/yellow onions could be substituted if you're not a fennel fan but I strongly urge you to try the fennel first.
