2bulbsfenneltops removed, bulbs cut in half vertically removing any outer damaged leaves, and then julienne (slice)
2tablespoonsolive oil
1teaspoonkosher salt
Instructions
Heat oil in a large pan over medium-low heat.
Add fennel and salt, and cook for 30 minutes. Then increase the heat to medium for the remaining 15 minutes, stirring occasionally until caramelized with crispy edges, 45 minutes total.
Remove fennel from pan and add to your favorite fish, meat, poultry, and/or vegetarian dish.
Notes
Caramelized Fennel pairs amazingly well with Shawarma-Spiced Lamb and any burger. Large white/yellow onions could be substituted if you're not a fennel fan but I strongly urge you to try the fennel first.
