1can(15.5 ounces) garbanzo beansdrained and rinsed
2tablespoonsolive oil plus more for drizzling
1tablespoonpaprika reg or smoked
1tablespoondried oregano
1tablespoongarlic powder
1/2teaspoonred pepper flakesuse more or less according to you spice preference
1/2teaspoonkosher salt
1/2cupgreek yogurt
1 1/4cupsfeta cheese
Zest of 1/2 a lemonapproximately 1 tablespoon plus more for garnishing
Sprig or two of fresh dilloptional
Instructions
Preheat oven to 400 degrees.
Place the chickpeas in a large bowl and add 2 tablespoons olive oil, paprika, garlic powder, oregano, red pepper flakes and salt. Toss chickpeas with the spices and then place the chickpeas in a single layer on a foil or parchment paper-lined baking sheet. Cook undisturbed for 20-25 minutes or until chickpeas are crispy on the outside.
While the chickpeas are cooking, blend together the feta, yogurt, garlic, and lemon zest until smooth.
Transfer the whipped feta to a shallow bowl or medium-sized platter and use a spoon or spatula to swirl the feta. Spoon the chickpeas on top of the feta. Drizzle with olive oil and garnish with any extra lemon zest and a sprig of dill. Serve with your favorite dipping cracker and/or veggie.
Notes
This recipe can easily be doubled for a larger party.Adding a drizzle of honey or hot-honey would be very tasty.
