Homemade Brazilian Mini Cheese Rolls

Equipment

  • Blender, mini muffin pan

Ingredients

  • 3/4 cup whole milk
  • 1/3 cup vegetable or olive oil I used olive oil
  • 1 egg large
  • 1 1/3 cups tapioca flour
  • 1/2 teaspoon kosher salt
  • 1/3 cup parmesan cheese grated
  • 2/3 cup mozzarella cheese fresh, hand grated (not pre-shredded)

Instructions

  • Preheat oven to 400 degrees.
  • Place the milk, oil and egg into the blender for 15-20 seconds, until ingredients are combined.
  • Next, add the flour and salt and blend for another 20 seconds.
  • Lastly, add the parmesan and mozzarella and blend until just combined, only 5-10 seconds.
  • Spray the mini muffin pan(s) and pour batter into each cup, filling nearly to the top.
  • Place tray on the middle rack of the oven and cook for 20 minutes, until rolls are golden brown and crusty on the outside.
  • Serve rolls in a basket or bowl.

Notes

Try adding fresh herbs or jalapeƱos to the batter.
Substitute other cheeses that melt easily to experiment...fontina, cheddar, etc.
