Instructions
In a small saucepan, combine tomatoes, soy sauce, olive oil, and black pepper (you can add more or less based on your taste preferences). Place over low heat and cook for 5 to 7 minutes, until the tomatoes start to soften and begin to burst with the juices collecting in the pan.
Meanwhile, cut the tofu lengthwise into 2 wide slabs and slice each slab into 1” squares.
To assemble dish, place 4-6 slices of tofu on plates or in shallow bowls. Divide the warm tomatoes on top. Add a large drizzle of toasted sesame oil and sprinkle with scallions and basil, if using. Serve immediately.
