cayenneoptional if you want a bit of heat
Instructions
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper (for easier clean up!) and then place a baking rack on top. Using a baking rack accomplishes two goals. 1) It allows for crispier bacon because the fat from the bacon drips onto the parchment and 2) No flipping of bacon slices is necessary because air flow circulates freely around each bacon slice. Easy!
Place bacon slices on the rack without overlapping the them. (Two trays may be needed.)
Put the bacon in the oven on the middle rack and cook for 10 minutes. Remove baking sheet from the oven and sprinkle the top of the bacon slices with sugar, approx 1/4 teaspoon (or more) per half slice of bacon. (If you’d like to add some spice you can also sprinkle cayenne on for a sweet and spicy rendition.) Place baking sheet back in the oven and continue cooking for another 15-20 mins. Total cooking time 25-30 minutes. I cooked mine the full 30 mins.
Let bacon cool slightly, serve and enjoy!
